Place 250ml water, mixed herbs, stock cube, cloves and salt & pepper into the Instant Pot.
Place the trivet inside with the turkey crown on top and close the lid.
Select Pressure Cook Manual High and programme the time based on the size of your turkey crown: 1.5kg – 30 mins; 2kg – 35 mins; 2.5kg – 45 mins; followed by 15min Natural Pressure Release for all sizes. Once finished, check the turkey breast is at least 75℃ at the thickest part, if not put it back in the Instant Pot for a few more minutes.
Once cooked, put the turkey crown onto a baking tray and add the juices in the Instant Pot to your gravy.
Cover with streaky bacon (if using) and place into the preheated oven at 200℃ for 10-15 minutes until the bacon and top of turkey is crispy.
Cover in foil and leave to rest until ready for serving.
