Ingredients
For the seasoning:
- 2 chicken breasts
- 1 tbsp cornflour for tenderising
- 1 tsp Chinese five spice powder
- 1 tsp ground white pepper
- 1 tsp garlic powder
- 1 tsp paprika powder
- 1 tsp chilli flakes
- 1/2 tsp salt
- 2 tbsp light soy sauce
- 1/2 tbsp Shaoxing wine
- 1 clove garlic
- 1 tbsp cooking oil
For the coating:
- 70 g tapioca or potato flour
- 2 tbsp cornflour
- 1 tsp baking powder
Instructions
- Butterfly the chicken breasts to make it one bigger piece, or several smaller ones if preferred. Use a rolling pin to roll/flatten to tenderise the chicken.
- Mix all the seasoning together to make a loose paste and coat the chicken breasts. Marinate for 30 mins.
- Combine the coating ingredients and cover generously each chicken breast. Dust off any excess.
- Spray the air fryer basket with cooking oil, as well as brush each chicken breast on both sides with cooking oil.
- Select AIR FRY on the Vortex, and set the time to 15 minutes and temperature at 205ºC, and press start.
- When the Vortex has heated, add the chicken.
- Turn each piece over at 5 minute intervals, brushing over with more oil each time.
- When the cooking program has finished, check the chicken is cooked in the centre. If the chicken pieces are thick they may need an extra 2-3 minutes.
- Once cooked, allow to cool on a wire rack to crisp up.
