In a large bowl, mix together flour, salt, baking powder and sugar; set aside.
In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture. Whisk.
Set aside for at least 30 mins for the baking powder to do its magic. You will notice this batter is denser than a crepe or pancake batter.
Pour the batter into a waffle mould.
Cook the waffles in a pan if you wish or bake them like I did using an air-fryer for 10 minutes at 165 degrees.
Whilst the waffles are cooking, add the cream to a bowl and beat until almost soft peaks form (still falls off the whisk)
Now, add the vanilla essence and food colouring and whisk for a few more seconds until soft peaks form. Be careful not to over whip.
Once the waffles are ready, top with the cream!
If you have a good pistachio paste, then please add some into this batter for the ultimate taste. Alternatively, you can make pistachio paste yourself.
