Ingredients
- 250 g all-purpose flour
- 1 tsp salt
- 4 tsp baking powder
- 4 tbsp white sugar
- 2 eggs
- 150 ml warm milk
- 75 g butter melted
- 1 tsp vanilla extract
- 1/2 tsp green food colouring
- 125 g peeled and grinded pistachios
Whipped cream:
- Whisk 250 ml double cream
- 4 tbsp caster sugar
- 1 tsp vanilla extract
- 1 tbsp pink food colouring
Instructions
- In a large bowl, mix together flour, salt, baking powder and sugar; set aside.
- In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture. Whisk.
- Set aside for at least 30 mins for the baking powder to do its magic. You will notice this batter is denser than a crepe or pancake batter.
- Pour the batter into a waffle mould.
- Cook the waffles in a pan if you wish or bake them like I did using an air-fryer for 10 minutes at 165 degrees.
- Whilst the waffles are cooking, add the cream to a bowl and beat until almost soft peaks form (still falls off the whisk)
- Now, add the vanilla essence and food colouring and whisk for a few more seconds until soft peaks form. Be careful not to over whip.
- Once the waffles are ready, top with the cream!
Notes
If you have a good pistachio paste, then please add some into this batter for the ultimate taste. Alternatively, you can make pistachio paste yourself.
