Ingredients
- 1 medium courgette
- 2 tsp kosher salt
- 1 egg
- 1 tbsp Water
- 128 g panko breadcrumbs
- 100 g Parmesan cheese
- 1 tsp smoked paprika
- Dipping sauce of choice
Instructions
- Slice the courgette into 1/8 inch rounds, sprinkle with salt and let stand at room temperature for 10 minutes.
- Set up for dredging: Combine beaten egg and 1 tbsp water in a shallow dish. Combine breadcrumbs, parmesan cheese and smoked paprika in a second shallow dish.
- Gently blot dry courgette with a towel to remove excess moisture.
- Working a few at a time, dredge zucchini slices first in the egg mixture, then place in the breadcrumb mixture and press the crumbs firmly on both sides.
- Select Air Fry, and set the temperature to 190°C and the time to 12 minutes, then touch Start to preheat the Vortex.
- When the display indicates “Add Food” carefully place the courgette chips into the frying chamber (leave a little space around each one)
- Turn the chips when prompted.
- When the Air Fry program is complete, remove the courgette chips and serve hot with your choice of dipping sauce.
