Ingredients

  • 1 red onion
  • 1 aubergine
  • 1 medium potato
  • 140 g Besan / Gram flour
  • 3 tablespoon Rice Flour
  • 90 g Spinach
  • Bunch of coriander leaves
  • 1 1/2 teaspoon cayenne pepper
  • 1 teaspoon garam masala
  • 2 teaspoon salt
  • ½ teaspoon Bicarbonate of Soda
  • 2 tbsp Oil
  • Ketchup and Chutney

Instructions

  1. Prepare your vegetables. Halve your red onion, then peel and slice thinly. Cut the unpeeled aubergine into fat disks then dice the disks into 1cm cubes. Peel your potato, cut it into quarters, then slice it thinly.
  2. Mix Besan flour with rice flour in a small mixing bowl.
  3. To a large mixing bowl add all the prepared vegetables, spices and salt. Set aside for five minutes to allow vegetables to release some water.
  4. Once the veg has sat and shrunken slightly from the salt, add 2 tbsp of oil to the veg and mix well. Add the flour mixture to the veg a spoon at a time, stirring the flour in after each addition, until all the flour is used up. Set aside for 5 minutes,
  5. After 5 minutes, give the the batter another mix. The batter should be the consistency of extra thick cream – not a dough – and should easily coat the vegetables. If necessary add a tbsp of water at a time to thin out the batter if it is too thick.

Duo/Pro Crisp

  1. Place the air fryer basket in the duo crisp. Spray the air fryer basket generously with oil to prevent the pakoras sticking.
  2. Spoon golf ball sized blobs of mixture into the air fryer basket, leaving a little space between each of the pakoras. Place the basket into the duo crisp. Secure the air frying lid, select air fry, 180C and set the timer to 12 minutes.

Vortex

  1. Spray the air fryer basket with non stick cooking spray. Spoon golf ball sized blobs of mixture into the air fryer basket, leaving a little space between each of the pakoras. Place the basket into the Instant Vortex. Select air fry, and set the timer to 12 minutes.
  2. Depending on size of pakora and consistency of batter, cooking time can vary slightly. Check the pakoras at 9 minutes to ensure no overcooking. Add more minutes to the cook time as needed should your pakoras be a little larger and not cooked through after 12 mins.
  3. Air fry the pakoras, turning them at 4 minutes and again at 8 minutes to ensure even browning. Once the pakoras are golden brown, crisp and cooked through, remove them and serve immediately along side your favourite chutney or dipping sauce.
