Mincemeat Blondies

Vortex Air Fryer


  • 100 g butter
  • 120 g brown sugar
  • 100 g white chocolate
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 110 g plain flour
  • 100-200 g mincemeat


  1. Place the butter and sugar into a saucepan and heat gently until the butter has melted.
  2. Remove from the heat, then add 50g of chocolate to the mixture and stir until combined.
  3. In another bowl, whisk the eggs with the vanilla extract, then add the melted mixture and stir.
  4. Add the flour and cinnamon and whisk until combined, then stir in the mincemeat.
  5. Select the Bake function on the Vortex and set the temperature to 152℃ and time for 35 minutes.
  6. Pour the batter into a lined cake pan, and place into the tray when temperature is reached.
  7. Once cooked, allow to cool for a few minutes, then remove from the cake pan and onto a cooling rack.
  8. Melt the remaining white chocolate and drizzle the white chocolate on top of the blondies.
  9. Allow to cool fully and the chocolate to set before cutting.
