Ingredients
- 1 peeled aubergine
- 40 g plain flour
- 1 egg
- 120 g panko or pre toasted breadcrumbs
- 1 tbsp Oil
- Salt and pepper
- 100 g cabbage
- 3 tbsp mayonnaise
- ½ garlic clove
- 2 brioche or soft rolls
Instructions
- Cut the aubergine into 1.5cm disks and season both sides with salt and freshly ground pepper.
- Set up 3 shallow dishes, one with the flour, seasoned with a pinch of salt and pepper, one with the lightly beaten egg, mixed with 1 tsp water, and one with the breadcrumbs.
- Dip the aubergine in the flour, then the egg and then the breadcrumbs covering the aubergine disk to form an even coating.
- Place the prepared aubergine in the air fryer basket onto a lightly oiled rack. Select Air Fry and set the temperature to 188°C and the time to 12 minutes. Ignore when prompted to Add Food as it will already be inside and flip the aubergine over when prompted to Turn Food.
- While the aubergine cooks make the slaw by combining the shredded cabbage with salt, pepper, mayonnaise, chilli flakes and garlic in a bowl.
- To plate up, smear some mayonnaise on the base of your roll, then top with your aubergine and slaw and serve immediately.
