Ingredients
- 2 red peppers
- Salt & pepper
- 1 tbsp olive oil
Falafel:
- 2 x 400g cans chickpeas
- 60 g chopped coriander
- 2 cloves garlic
- 1 small red onion
- 25 g plain flour
- 2 tsp cumin
- 2 tsp paprika
- 2 tbsp lemon juice
- Salt & pepper
For serving:
- Pita bread or buns
- Guacamole
- Sundried tomatoes
Instructions
- Start by slicing the red peppers into strips, and season with salt and pepper and rub the 1 tbsp olive oil over each piece.
- Select Air Fry and adjust the temperature to 170°C and set the time to 8 minutes.
- Once the air fryer has preheated and you are prompted to Add Food, place the sliced peppers inside and leave to air fry. Ignore when prompted to Turn Food.
- Meanwhile, make the falafel. Using a blender or food processor blend all the falafel ingredients into a rough paste – it doesn’t need to be completely smooth.
- Shape the mixture into disks – you should be able to make about 24-26.
- When the red peppers have finished, remove them from the air fryer basket and set to one side then spray the frying basket with olive oil. Select Air Fry again and adjust the temperature to 176°C and time to 14 minutes. It should already be to temperature so place the falafel disks inside leaving a little space around each one. You will need to work in batches.
- Flip the falafel over when prompted to Turn Food and continue cooking for the rest of the time.
- When the cooking program has finished, remove the cooked falafel disks and put to one side and repeat the Air Frying process for the remaining falafels.
- When all the falafel has cooked, serve inside pita breads or buns, with the roasted red peppers, sundried tomatoes and guacamole.
