Ingredients
- 270 g plain flour
- 2 tsp ground ginger
- 2 tsp baking soda
- 1 tbsp cinnamon
- ½ tsp salt
- 170 g butter
- 200 g white sugar
- 1 egg
- 85 g maple syrup
- 70 g sugar for coating the cookies
Instructions
- In a large bowl, combine the flour, ginger, baking soda, cinnamon and salt.
- In a second bowl, beat the butter with the sugar, egg and maple syrup until creamy.
- Add the dry ingredients to the wet and blend to combine. Once everything is mixed, shape into small balls using your hands.
- Put the sugar for coating in a separately bowl then carefully dust the biscuit balls in the sugar.
- Slightly flatten each ball (the thicker it is, the chewier the biscuits!)
- Select Air Fry on your Vortex Air Fryer and set the time to 8minutes and temperature to 152°C and press start.
- When prompted to add food, place 4-6 biscuits into the air fryer basket (leaving space around each one.) Ignore when prompted to turn food.
- Cook until hard on the outside but soft to touch when you press the biscuit.
- Repeat steps 6-8 for the remaining biscuits.
- Allow to cool down before eating and enjoy!
