In a small bowl, mix the salt, pepper, sugar, 5 spice and chilli flakes together. Set aside.
Toss the prepared onions and peppers with a drizzle of cooking oil, then place into the Vortex Air Fryer.
Coat the potatoes in oil, then light dust with salt, and place them in the other side of the basket.
Select Air Fry, set the temperature to 175°C and the time to 15 minutes, and press start. There is no need to preheat.
Shake the onions, peppers, and potatoes halfway through cooking to ensure they brown evenly.
Once the timer is up, remove the peppers and onions from the air fryer basket and place them into a large bowl. They should be soft and lightly browned at this point.
Shake the basket to settle the potato chips into an even layer. Select Air Fry, set the temperature to 200°C, and the time to 5 minutes, and press start. There is no need to preheat.
Once the chips are fully cooked, add them to the bowl with the pepper and onions, toss through the seasoning you made earlier. You can add the seasoning to taste, depending on your preferences.
Once coated in seasoning, return the salt and pepper fries and veg to the fryer basket. Select Air Fryand set the temperature to 200° C for 2 minutes, until nice and hot. Serve immediately, garnished with your sliced spring onions.
