Ingredients
3 tortilla wraps
80g mozzarella, grated
6-7 slices of chorizo, roughly chopped
a handful of sundried tomatoes, roughly chopped
1 small red onion, diced
a handful of fresh basil leaves, roughly chopped
KIT Small circular silicone moulds
Instructions
These tortilla cups are great for using up any leftovers from your fridge. My favourite combination below just used some of the ingredients we didn’t use in the pizzas we made the night before. I love this recipe; you can add whatever you like to suit your taste.
1. Cut out small circles from the tortilla wraps, either drawing around a small bowl with a sharp knife or using a cookie cutter. Place each circle into a silicone mould and press them into the base to line the moulds.
2. Fill each cup with cheese, chorizo, tomatoes, red onion, basil and mozzarella cheese, dividing the fillings equally between the cups.
3. Set your air fryer to 180°C and cook the cups for about 10
minutes, until the cheese has melted and the tortilla case has crisped up.
