Gnocchi alla Vodka

Ingredients

  • 1 brown onion
  • Vegan butter
  • ½-1 tsp chili flakes optional
  • 3 cloves garlic grated
  • 100 g tomato paste
  • 400 g Italian chopped tomatoes
  • 250 ml water
  • 160 ml vegan oat cream
  • 60 ml vodka
  • 800 g gnocchi
  • 60 g vegan mozzarella or vegan cheese of choice

Instructions

  1. Finely dice the onion, then add to the inner pot with the butter. Select Saute on the Duo Crisp with Ultimate Lid and set to a medium/low heat (level 2).
  2. Saute the onions until translucent, about 5 minutes.
  3. Add the chilli flakes, garlic, tomato paste, chopped tomatoes and water to the pot, and stir to combine.
  4. With the pressure cooking cover in position, lock the lid and select Pressure Cook, setting the time for 15minutes.
  5. Once the cooking program has finished, perform a quick pressure release.
  6. Stir the vegan cream into the sauce, then blend until very smooth and creamy.
  7. Stir in the vodka, and add salt and pepper to taste.
  8. Add the gnocchi straight into the sauce and stir until the gnocchi is submerged.
  9. Select saute again, then simmer the gnocchi for 1 minute while stirring, then stop stirring and scatter the cheese over the top of the gnocchi.
  10. Remove the pressure cooking cover, and lock the lid. Select Air Fry and set the time to 5 minutes and temperature to 190C.
  11. Cook until the cheese is lightly brown and melted, then spoon into bowls and serve immediately.
