Ingredients
- 6 chicken wings halved
- 1 bulb garlic
- 3 lemongrass finely chopped
- pinch of salt
- white pepper & sugar (for the garlic & lemongrass frying)
The Marinade
- 1/2 tsp spice
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1 tsp sesame oil
- 1 tbsp Shaoxing rice wine
The Batter
- 100 g flour
- 1 1/2 tsp bicarbonate of soda
Quick Sweet Chilli Sauce
- 3-4 cloves garlic
- 4-5 large red chillies
- 1 tbsp premium light soy sauce
- 5-6 tbsp rice vinegar
- 120 g sugar
- 2 tbsp water
Instructions

Mix the marinade ingredients in with the chicken wings. Then pour the batter ingredients over and mix well.

Place the wings into the Vortex air fryer with space between each piece. Spray the wings with oil and select Air Fry and set the temperature 200°C and time to 25 minutes.

When prompted to turn food, give the wings a flip.

While the wings are air frying, boil the sweet chilli sauce ingredients, reducing to a slightly runny jammy texture in a saucepan of using sauté on your Instant Pot.

Then in a wok, fry the garlic and lemongrass until crispy and golden, then strain through a sieve onto kitchen paper.

Season the wok ingredients and when the wings are cooked, toss through the fried wok mix and serve with the sweet chilli dipping sauce.
